I grew up in Oaxaca watching my mother, Dorotea, cook for fiestas patronales and weddings. She gave the flavor to the mole, the pipián and the higadito, and that is where it was born in me.
Twenty years of experience later, I opened El Carrito Centroamericano in 2024 to bring Milwaukee a wider gastronomy, for more hermanos hispanos looking for the flavor of their country. The pupusas came from wanting to cook the food our Salvadoran neighbors grew up on, so both ended up on the same menu on purpose.
