El Carrito Centroamericano started in 2024, but the cooking behind the truck goes back a lot further than that. My experience as a cook for 20+ years motivated me to start a food truck offering all kinds of Central American food.
We focus on pupusas salvadoreñas. Each one gets filled, pressed and set on the comal after you order it, which is why it lands in your hand blistered and still steaming. The fillings run the full range: frijoles con queso, queso con loroco, calabacita, rajitas, ajo, chicharrón, asada, espinacas, revueltas, and our pupusa birria with consomé on the side.
Yo soy de Oaxaca, and that is where the other half of the truck comes from. We sell tacos, tortas and hamburgers, with asada, pastor, pollo, chorizo, carne molida, campechano and cochinita pibil to choose from, plus huaraches, gorditas, quesadillas and burritos. Elote, tamales, alitas and nachos round it out, and there is horchata salvadoreña, jamaica and Jarritos to wash it down.
What moved us was to put Central American food to diversify the local community food offerings. Milwaukee was never short on places to eat. It was short on places serving pupusas revueltas next to tacos de cochinita pibil, and that gap is the reason the truck exists.
